Meet Marcus Samuelsson

A James Beard awarded celebrity chef with Swedish and Ethiopian influence, Chef Marcus Samuelsson has become one of our generation’s most prolific culinary magicians who continues to reinvent the passion of cooking. Committed to crafting new flavors and food that celebrates fine cuisine, Samuelsson is a poster child for an industry that is becoming more diverse for the better.

With a new restaurant opening just around the corner in 2022, Samuelsson is going back to the kitchen to test new recipes that the boundaries of his menus even further. Barley bread wrapped and baked in a banana leaf. Pancakes with blueberries and grilled banana syrup. Jollof rice with rock shrimp and clams. These are just a few examples of the prestigious chef’s vivid imagination and his love affair with taste buds.

It all begins in the kitchen, but when creativity is as big as Samuelsson’s, the question becomes “what does your kitchen look like?” And like that, the birth of My Mark, a web series from the Bon Appétit franchise, began.

My Mark: A Bon Appetit Feature

Two reputable names in fine cuisine come together to celebrate the art of cooking as the Swedeopian chef spearheads the first episode of this series from Bon Appétit. This feature takes a look inside one of the industry’s most recognized and celebrated chefs as he masters his cooking techniques from the comfort of his home kitchen in Sag Harbor.

For Samuelsson, Monogram is the secret ingredient to his never-ending quest for groundbreaking gastronomy, which relies heavily on performance, quality, and versatility.

What Does Samuelsson Cook On?

When a culinary palate is as diverse as Chef Samuelsson’s, no ordinary cooking setup will do. For his ensemble, the award-winning chef depends on a Monogram 48” dual-fuel range coupled with the agility and modernity of a Monogram 36” induction cooktop.

In the words of Samuelsson, “You can’t cook precise if you don’t have great relation with heat,” further mentioning, “Because of the quality of the range, I can really cook it the way we cook it in the restaurant.” And you can be sure that’s by design.

With models awarded Food & Wine Picks for 2021, Monogram ranges embody a lot of what Samuelsson pursues in his culinary journey as a flavor alchemist. As the chef describes, “Cooking is a craft, but it’s also an art, and that balance between artistry, look at the design,” an idea Monogram also believes in with its lineup of ranges that are “Reimagined. Reinvented. Recognized.”

Throughout the episode, Samuelsson demonstrates how a pro navigates the kitchen with the powerful performance of his Monogram professional range, complete with four brass burners, a grill, and a griddle. The model is full of state-of-the-art cooking features even the pros recommend, including a Hot Air Fry function, Wi-Fi compatibility, and up to 23,000 BTUs of flame power. That’s on top of standard features like solid-brass knobs, a vivid LCD touch control screen, and even convection inside two ovens.

Coupled with a five element induction cooktop capable of sous vide slow cooking, syncing heating elements, and guided cooking, it’s easy to see why Samuelsson feels inspired by this kitchen setup.

A professional range and induction cooktop might be enough for the typical chef, but then again, not every chef is Marcus Samuelsson.

To complement his main cooking zone, a Monogram Advantium speed oven and a Monogram hearth oven round out the kitchen suite with maximum cooking versatility. In one of the more tantalizing scenes of this episode, Samuelsson comments, “In the hearth oven, we can make Neapolitan style pizza, Detroit style pizza, New York style pizza,” referring to Monogram’s 30” smart hearth oven where the chef creates one of his new signature dishes, a Swedish pizza with gravlax and dill oil.

The specialty oven replicates brick hearth ovens, producing up to a whopping 1,300 degrees of electric heat that crisps up crusts to flaky perfection.

The 30” build seamlessly pairs with a 30” speed oven that features five cooking technologies: convection baking, toasting, warming and proofing, microwaving, and precision cooking.

How Does Marcus Samuelsson Keep Foods Fresh?

As Samuelsson and his team of understudy chefs experiment with new recipes for a 2022 restaurant opening, the chef prepares a soft launch by gathering a few of his neighbors for a trial run. Of course, no dinner party is complete without the perfect wine pairing.

Samuelsson goes all-in on his sommelier game with a Monogram built-in wine cabinet. This addition is ideal for serious wine collectors, featuring two independent temperature zones in an upper compartment, plus a convertible space below. The third compartment provides the flexibility to freeze, store fresh foods, or stock up on another wine variety for maximum convenience.

All in all, this Monogram wine sommelier allows Samuelsson to showcase up to 106 wine bottles in perfect climates ready to pour for fish, beef, or chicken entrées, or desserts.

Opposite the built-in wine cabinet is a fully integrated refrigerator. Like the Monogram wine refrigerator, this all-refrigerator features a bottom drawer with convertible climate settings to store foods from fresh to frozen. Crafted with a glass door for an easy view of ingredients inside, this addition is as perfect a combination of style and convenience as Samuelsson’s Swedish and Ethiopian background.
